Kulinaria w przestrzeni miasta : nowe trendy, nowe potrzeby mieszkańców
2015
The subject of this article is culinary trends observable in Polish cities during the past few years. They include both the rediscovered practices, directly related to the cultural (culinary) heritage of a particular area, and these which have become popular only recently. According to the author, characteristic culinary fads are: the promotion of local delicacies on a large scale, growing interest in shopping in farmers’ markets offering organic produce (bio-markets) and traditional goods, growing popularity of street food (including street food festivals and picnics), and organizing the so called “breakfast on the grass” events.
Culinary choices: A sociopsychological perspective based on the concept of distance to the object
2015
Culinary choices are a dynamic process that involves many considerations, including individual, contextual, cultural, and social factors. This study provides a better understanding of how culinary socialization along with food neophobia, culinary decisions and culinary habits, underlie culinary choices, measured by the concept of Distance to the Object (DO). This concept is useful in exploring the role of some psychosocial factors: knowledge (real and perceived), involvement (importance, personal identification, perceived ability), and level of practices (behaviors) associated with the social object under study, here, cooking. In this study, the DO concept measures the relationships of an i…
Semiotics, blogs and gastromania
2021
The current culinary megatrend owes much to Internet socialization practices. Discussions online began very early (the boards of Chowhound, for example, have already been operating since 1997), which says a lot about how much the “great conversation” of online communities is linked to gastronomic discourse. This paper propose a semiotic assessment of such a connection.
Tourists’ motivation toward culinary destination choice: targeting Italian tourists
2021
Over the last years, social and environmental issues have played an increasingly important role both for tourists’ destination choice and for the consumption of agri-food products. However, in the literature on culinary tourists’ behavior, it is not clear whether sustainability issues also affect the configuration of specific culinary tourists’ targets. This study tries to bridge this gap by carrying out a segmentation of culinary tourists in Italy, a country known worldwide for its culinary specialties. In particular, this study aims to understand whether the growing tourists’ sensitivity toward environmental and social aspects shapes specific targets of culinary tourists. The results show…
Cous cous teaches that love never stops!
2022
The culinary tradition of cous cous, original from the cou…
Street food in Palermo: Traditions and market perspectives
2022
Street food protects and promotes the history and tradition of a place. The origin of street foods largely relies on the cultural and natural landscapes that surround the environments where they are prepared and sold. Street food illustrates a culinary heritage that is embedded in the ways of life of people, both residents and visitors. Drawing on a qualitative study, the researchers conducted ten interviews with street food vendors in the city of Palermo (Sicily, Italy) in order to understand this growing phenomenon in urban environments of the Mediterranean, where the street food also brings the customers to ancient times. Results show the strategy of the entrepreneurs as street food vend…

Data on the productivity of substratum inoculated with C-142-c strain and the nutritional value of cultivated "cardoncello" mushrooms are also provided.
Taxonomic identity, geographic distribution and commercial exploitation of the culinary-medicinal mushroom Pleurotus nebrodensis
This work provides an updated overview of an investigation carried out in Europe and elsewhere on the culinary-medicinal mushroom Pleurotus nebrodensis. In particular, the taxonomic identitiy of P. nebrodensis and other related oyster mushrooms with entirely white to cream basidiomata that grow on different plants of the family Apiaceae, is clarified. The differences in the cultivation techniques, the quality of product sold and the sales price in Europe and Asia are also highlighted.
